Vertical cooking chambers feature 5-7 adjustable stainless shelves (20″x30″ half pan capacity each) that hold foil pans of classic bbq sides including ranch beans, creamy coleslaw, skillet cornbread, and potato salad. Low 225-250°F smoke circulates evenly upward, infusing cheddar mac, brown sugar baked beans, and vinegar slaw with hickory without drying.

This setup processes 15-20 half pans per load alongside ribs or chicken, maintaining side dish texture through 4-hour smokes. Removable racks enable quick buffet staging while drip pans catch cheese or sauce spills for clean transitions to serving lines
