Low & Slow Smoking
For indirect heat offset cooking, the best cooking oils are those with a high smoke point and neutral flavor, since the food cooks in circulated heat rather than direct flame. Avocado oil is especially strong for higher-heat use, while canola, peanut, soybean, and refined sunflower oil are dependable choices for both cooking and smoker seasoning.
If you’re seasoning or protecting an offset smoker, cooking-grade oil is still the right path, and high-smoke-point oils are preferred so the finish can polymerize properly without breaking down too early. For lower-temperature indirect cooking, olive oil can work too, but refined oils remain the safer all-purpose option when you want more heat tolerance.
