Pellet-fired smoking cooks zucchini bread at 325°F (close to 350°F grate level) for 45-60 minutes, using apple or cherry pellets for mild fruitwood smoke that complements cinnamon, nutmeg, and chocolate chips. Recipes mix grated zucchini with flour, sugar, eggs, oil, baking soda/powder, then bake in greased loaf pans rotated halfway for even doneness.

This method produces moist loaves with subtle smoke ring edges and enhanced nutty flavors, ideal for Traeger or similar pellet grills. Test doneness with skewer; foil tops if browning too fast.
