Three large rack smokers feature 48″x30″ expanded metal shelves across three levels (144 sq ft total capacity) optimized for 3-ingredient BBQ sauce application midway through smokes. Pitmasters brush on the simple ketchup-brown sugar-Worcestershire glaze at the 3-hour mark, then return racks for caramelized bark formation without babysitting.

This setup processes 200 lbs bone-in chicken quarters or 100 lbs rib racks per load at 250°F, developing sticky mahogany bark from the minimal-ingredient sauce. Stainless slide-outs enable even glaze distribution during high-volume catering without temp loss.
